If you were to rattle off classic sandwiches, a BLT would absolutely come to mind. I looooove sandwiches. There's something about the bread, the meat, the cheese, and whatever condiments you choose - the combinations are endless and you virtually cannot go wrong with a sandwich. BLTs are a go-to at diners, with a heaping pile of fries, and honey mustard to dip the fries in. I am literally craving this right now as I type. Making delicious BLTs for dinner could not be easier, and when you add avocado, they're even BETTER.

A BLAT is literally a bacon, lettuce, avocado, and tomato sandwich smothered between two toasty pieces of bread slathered with a thick layer of mayonnaise. I'm talking like a thicc layer of mayo because want all the flavors here. There have been plenty of nights where I didn't want to deal with making these because prior to learning how to bake bacon, frying on the stove was incredibly messy and make me anxious about sputtering bacon fat everywhere. Now that I make my bacon in the oven, I can easily toast a few slices of bread, prep my lettuce and tomato, and anxiously away the greasy, savory bacon that cooks in the oven. Plus, when making bacon in the oven it's virtually a one pan meal, so you get to discard the aluminum foil, clean a knife or two, and rinse a cutting board, and you're ready to watch a Below Deck marathon on Bravo.

These BLATs are crunchy, crispy, savory, a little sweet, and just downright scrumptious. As I head back to work full time, I know these will be on the menu time and time again as they are just SO easy to prep and make in under 30 minutes. Grab several napkins though, this is gonna get messy!

A classic sandwich made fancy with the addition of avocado. Feast your eyes (and bellies) on this delicious Bacon, Lettuce, AVOCADO, Tomato sandwich. Plus, no need for messing up the kitchen when all ya gotta do is bake the bacon. Trust me on this one.

Ingredients

  • 8 slices of bread, toasted
  • 1 romaine heart, broken into large sections
  • 1 large beefsteak tomato, thinly sliced
  • 1 package of bacon
  • 2 avocados, sliced thick
  • 2 tbsp mayonnaise

Instructions

  1. Preheat the oven to 400º and line a large baking sheet with aluminum foil.
  2. Prepare the baking sheet with the slices of bacon and place in the oven to bake for 13-14 minutes.
  3. Meanwhile, toast the slices of bread and as they finish toasting to your desired crispness, set them aside.
  4. Once the bacon is done cooking, take out and let cool for 4-5 minutes.
  5. Assemble the sandwiches with a smear of mayonnaise, one large slice of romaine lettuce, one slice of tomato, a couple slices of avocado, and two pieces of bacon. Spread a little more mayonnaise on the other slice of bread.
  6. Close the sandwich and enjoy with tater tots, baked french fries, or a simple salad!
