Let's face it, we could all use a few extra servings of vegetables in our lives. Okay, maybe I'll just speak for myself here, but I definitely know I need a lot more veggies. I typically try to have veggies at most meals, but sometimes, it's just not possible. I love my easy adobo roasted brussel sprouts, and my garlic butter rainbow carrots, but this shaved brussel sprout salad is so delicious, fresh, and the perfect way to get more veggies in.

Shaved Brussel Sprout Salad

This recipe doesn't get any easier than just tossing some shaved brussel sprouts into a bowl with some condiments, cheese, and plating. That's it, that's the recipe. If you love a crunchy, lettuce-free salad, with a touch of sweetness and a simple drizzle of oil, you're going to quite literally eat this recipe up.

What makes this a salad?

Because I said so! Hah, but in all seriousness, this recipe is a salad because it's dressed! Salads all come with some sort of dressing, snd this one is no exception. This salad is dressed with some extra virgin olive oil, lemon juice, and freshly cracked pepper. Light, simple, and utterly delicious.

How do I serve this?

You don't have to plan an elaborate meal to serve this salad. This salad can stand on its own as a lunch or as an appetizer for dinner. A few other things you can do with this recipe include:

  • Add some protein! Salmon, steak, shrimp, chicken, all of these add great protein and flavor to the recipe
  • Throw in some chickpeas or nuts
  • Scoop some into a wrap for a vegetarian sandwich

Kitchen Tools

This recipe doesn't ask for a ton of different tools, just pretty standard things you'd use on a regular basis:

  • Large mixing bowl
  • Tongs: To mix the salad together
  • Microplane: To grate the cheese into the salad

  • Shaved brussel sprouts: You can likely find shaved brussel sprouts in just about any grocery store, especially Trader Joe's
  • Olive Oil: To dress the salad and soften the brussels a little
  • Craisins: Dried cranberries give a little sweetness to the salad
  • Lemon Juice: Adds to the dressing, and gives a little acidity
  • Parmesan Cheese: If you don't have a parmesan cheese block in the house, feel free to use whatever cheese you do have, or add in shaved parmesan from a container.
  • Pepper

Directions

You'll be very thankful that there are no complicated steps to making this dish. You'll be eating in no time!

  1. In a large bowl, pour in the brussel sprouts then toss with olive oil.
  2. Add in the craisins, lemon juice, and parmesan cheese then toss.
  3. Feel free to add more oil and massage the brussel sprouts to soften.
  4. Top with freshly cracked pepper.
