Buffalo Chicken Meatballs

Another week, another chicken meatball in this house. This time, these meatballs are buffalo chicken style. I’ve always been a fan of buffalo chicken: wings, boneless bites, chicken dip, etc. It was a no brainer when I looked in my cabinet and saw The New Primal buffalo seasoning, the prompt for me to make these chicken meatballs. I’ve been using The New Primal products for quite some time (probably before I had my food blog) and what I love about The New Primal is their consistency with quality ingredients and flavor. Some of my favorites include their Classic marinade, their dijon mustard, and their all purpose seasoning.

Buffalo Chicken Meatballs

I wasn’t always a fan of ground chicken, so now that I’ve found my groove with making them, I don’t plan on stopping. The trick is to not overmix and work the ingredients too much, which will then cause the meatballs to feel tough when biting into them. This recipe is similar towith some slight variations.

Chicken Meatball Tips:

  1. Don't over-knead the mixture: MIx together the meat and ingredients just until combined. If you work the mixture too much it will become very tough and dense.
  2. Larger in size, better for baking: meatballs dry out fast, especially when baked. You don't need gigantic meatballs here, but consider making them a little larger than a golf ball.
  3. Don't forget to spray the pan: In my experience, if I don't pre-grease the aluminum that the meatballs bake on, they stick and fall apart. Pre-grease before adding the meatballs prior to baking!

Who doesn't love buffalo chicken?! These buffalo chicken meatballs will become your go-to for an easy meal-prep dinner, party appetizer, and are perfect for as a freezer meal!

Ingredients

  • 1 lb ground chicken
  • 1 egg
  • 1/3 cup breadcrumbs
  • 1/2 cup parmesan cheese
  • 2 tbsp buffalo seasoning
  • 1 tbsp garlic powder
  • 1 tbsp onion salt
  • 1 tbsp onion powder
  • 1 tbsp chili-lime seasoning
  • 1 tbsp dried basil
  • salt
  • pepper

Instructions

  1. Preheat the oven to 375* and line a baking sheet with aluminum foil.
  2. In a large mixing bowl, add the ground chicken, egg, seasonings, buffalo seasoning, breadcrumbs, and parmesan cheese. Mix to just combine all ingredients (this works better when using your hands – a trick is to use four fingers and a rake to "rake" the ingredients together).
  3. Once the meat has come together, form meatballs with your hands (about two tbsp of meat per meatball).
  4. Place on the baking sheet and sprinkle a little more of the buffalo seasoning right on top. Bake for 30 minutes and toss in your favorite hot sauce.
