Garlic Butter Rainbow Carrots

Have you ever fallen in love with a vegetable before? These garlic butter carrots may just be my newest love, and I’m not ashamed of it. Carrots are a incredibly versatile vegetable, and have loads of benefits for your health. I’ve never roasted rainbow carrots before, but after seeing my aunt make them several times, I decided to try my hand in making them, but with a garlic butter sauce. Making these carrots in a garlic butter white wine sauce is one of the easiest recipes to make, and pair beautifully with lots of other recipes on here, like my italian style chicken meatballs or buffet style for a literally any dinner.

Carrots are known to help with eyesight. What you may not know about carrots is they are rich in fiber, potassium, and actually aid with fighting sun damage thanks to the beta-carotene in them. In the kitchen, carrots can be chopped in a salad, roasted, grilled, sautéed, or steamed. I opted to make a garlic butter sauce to pour on top of pre-roasted carrots and pair them with a new chicken meatball recipe I experimented with (coming soon!). This is a pretty straightforward recipe to follow, and can definitely be prepped ahead of time.

Ingredients

  • 1 package of rainbow carrots
  • 2 tbsp olive oil (I love using California Olive Ranch olive oil)
  • 3 tbsp butter
  • 3 garlic cloves, finely sliced
  • 1 tbsp white wine

Directions

Preheat the oven to 400º and line a baking sheet with parchment paper. In a medium sized bowl, toss together the olive oil and carrots. You could season with salt and pepper if you desire as well! Once the carrots are coated, place them flat on the parchment paper. Bake for 25 minutes. Meanwhile, in a small saucepan, melt the butter and add the garlic. Let sit for 2-3 minutes on low flame, then add the white wine. Let sit for another minute and turn off the heat. Once the carrots are finished roasting, plate the carrots as desired and pour the garlic butter over the top, making sure to cover the area of the carrots. Garnish with fresh parsley and serve.
