Who doesn't love a popsicle in the dead of summer? Refreshing, cooling, and satisfying, especially when enjoyed by the pool with a group of friends. Now, imagine these same popsicles, but made with VODKA. Oh you read that right, these are lemon zinger popsicles, and they are boozy and amazing.

What are lemon zinger popsicles?

Don't let the fancy name fool you, essentially these are lemon vodka popsicles made with just three ingredients: coconut water, vodka, and lemon juice and zest. Popsicles with booze in them always need a fun name, especially as these add a little zing to them with the zest of the lemon too.

Why add vodka to these popsicles?

I mean, why not?! The fun of making popsicles with booze is really just for the party factor. Of course, if you are not a drinker or are making these popsicles for children, please do not add any vodka or any other alcohols at all. Feel free to add in honey, agave, or other mix-ins to flavor it up, or leave as is! They'll be delicious no matter what.

How do you prepare these lemon zinger popsicles?

The best part about making these popsicles is that they only take a shaker, ice, some ingredients, and a popsicle mold. Depending on the popsicle mold you make, this will either yield 5-6 popsicles. For these popsicles, add ice to a cocktail shaker. Pour in the vodka, coconut water, lemon juice and lemon zest. Cover and shake well. Pour the mixture evenly among the popsicle mold and close with the popsicle sticks. Set in the freezer and let freeze overnight.

Can you freeze boozy popsicles?

Yes! I know that vodka doesn't necessarily freeze in the freezer, but with the addition of coconut water, it'll freeze just enough to be eaten like a popsicle. If you want to make sure they are really frozen, add a little more coconut water and a little less vodka.

Ingredients

  • 2 shots vodka
  • 1 cup coconut water
  • Juice of one Lemon
  • Zest of one lemon
  • Ice

Instructions

  1. Add ice to a large shaker and pour in the vodka, coconut water, lemon juice, and lemon zest.
  2. Cover and shake well.
  3. Pour into a popsicle mold (I used 3.3oz molds and this recipe yields 6 popsicles).
  4. Add in the popsicle sticks and freezer overnight.
