Who doesn’t love lasagna? The taste of the gooey cheese, the ricotta and egg mixture, and those delectable layers of noodles stacked evenly upon each other. This lasagna is so delicious and perfect for meal prep! I am literally drooling thinking about making this no boil four cheese lasagna again soon. I was always so nervous to use no boil noodles, only because I wasn’t sure if it would actually work. After reading up on the use of these kinds of noodles, it’s actually very simple and I prefer it!
Making lasagna can be a labor of love, because it takes patience with assembling the layers of the dish, adding the marinara, the cheese, then the noodles, rinse and repeat. The benefit of using these no boil sheets is that you can skip boiling the pasta altogether. I found mine at Whole Foods, and you can find no boil lasagna sheets in just about every grocery store. An added bonus to this dish? You can make this on the weekend and have it for dinner on a busy weeknight. The trick to getting this dish perfectly baked is the cover with foil for the duration of baking, and uncover and broil on the top rack of the oven until the cheese gets crisp and lightly browned.
Start by preheating the oven to 400º. In a small bowl, mix together the egg, ricotta, parmesan cheese, and set aside. In a pyrex or oven-safe dish, layer two spoonfuls of marinara at the bottom and smooth around to cover the base of the dish. Layer two sheets of the no boil lasagna noodles, then add a scoop of the ricotta mixture and spread to cover the area of the noodles. Pour a dollop or two of the marinara on top and smooth over the ricotta. Repeat this assembly until all of the lasagna noodles and the ricotta mixture have been finished. For the final layer, pour the remaining marinara and top off with the four cheese blend. Cover with aluminum foil and bake for 35 minutes.
