Anyone who knows me will say that I am a devout meal prep-aholic. Sundays are my day to get things done, organize my life for the upcoming week, and get to some recipe testing. Prepping at least one or two meals on Sundays helps me mentally get ready for the week and also alleviates running home to start cooking at 5pm. I CAN do this, but every night? Not for me. Finding recipes that are equally tasty as they are meal prep-friendly, as well as accessible for my son is super important, and this parmesan crusted turkey meatloaf is just the ticket. I know this will be on repeat in my home, especially given how easy it is to prep, cook, and save. Also, the ground turkey is a nice change from ground beef.

Ground turkey can sometimes be a little dry and tasteless, but the trick is adding more seasoning than you may think. Ground turkey is leaner, less heavy, and is insanely versatile. I've made Sloppy Joe's with ground turkey and they actually came out better than with ground beef (psst, this recipe coming soon). There's just something about making a classic meatloaf and pairing with roasted veggies, mash potatoes, or even a side salad that feels so right, especially as we approach cooler weather. Parmesan Crusted Turkey Meatloaf Tips and Tricks:

  • Do not over-mix the meat mixture. It'll cause the meatloaf to be more chewy and tough
  • Add more seasoning than you think. Turkey is versatile, but can also be bland. Use a generous amount of seasonings, without overdoing it, and you'll be golden.
  • No need for a loaf pan to bake the meatloaf in. Just use a baking sheet and aluminum foil. Shape it with the palm of your hands.

Parmesan Crusted Turkey Meatloaf

Ingredients

  • 1 lb ground turkey
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/2 cup parmesan, grated
  • Garlic powder
  • Salt
  • Pepper
  • Dried oregano
  • Dried basil
  • 1 tbsp dijon mustard
  • 1/4 cup parmesan, for the top

Instructions

  1. Preheat the oven to 400º and line a baking sheet with aluminum foil.
  2. In a large bowl, add the ground turkey and crack in the egg.
  3. Season with the garlic powder, basil, oregano, salt, pepper.
  4. Add the dijon mustard, bread crumbs, and parmesan and knead the meat mixture together until all of the ingredients are fully combined. Do your best not to over mix. The meat mixture should be sticky, but not tacky or tough.
  5. Pour the mixture onto the aluminum foil. Using the palms of your hands, form the mixture into a "loaf" by pressing up the width of the sides and pinching front and back end of the meatloaf. Sprinkle the remaining grated parmesan cheese on top.
  6. Bake at 400º for 30-35 minutes.
