Who says pumpkin is overrated?! I want to talk to them, because these pumpkin honey waffles are literally the most amazing combination of flavors I've ever made in waffle form. I can confidently say that these are the best waffles I've made in a long time, and it all has to do with the honey incorporated into the recipe.

Pumpkin Honey Waffles

Let's talk about these pumpkin honey waffles. I mean, they're amazing if you ask me. These waffles are fluffy, flavorful, and when paired with the raspberry compote, they make for a great brunch entree. Making these pumpkin honey waffles is very easy and doesn't require a lot of ingredients, plus with the addition of honey as the natural sweetener, you're getting a wholesome meal to kickstart the day!

Ingredients

Making these waffles could not be any easier. Get your tastebuds ready for the most scrumptious waffles you've ever had.

  • Pumpkin: it's the season for pumpkin, and pumpkin gives these waffles a gorgeous orange hue.

  • Oil: adds the fat we need for the waffles to get crispy on the sides.
  • Egg: binds the batter together
  • Milk
  • All-Purpose or Paleo Baking Flour: I really enjoy using Bob's Red Mill paleo baking flour blend, which you can find here. Otherwise, all-purpose flour works just as well!
  • Baking Powder: leavens the waffles
  • Pumpkin Pie Spice: a little of this goes a long way! Or, simply just use cinnamon.

Directions

If you have a waffle iron, a bowl, a ladle, and the honey needed for this recipe, you are all set!

For the Compote:

  1. Add the honey and the raspberries to a small bowl. Using a muddler or a thick-edged spoon, muddle the raspberries and honey together until it forms a sauce or compote consistency.

For the Waffles:

  1. Crack the egg into a large mixing bowl and pour in the honey, olive oil, pumpkin, and milk. Whisk to combine.
  2. To the same bowl, pour in the flour, baking powder, and pumpkin pie spice and whisk to incorporate.
  3. Ladle waffle batter into a pre-greased and hot waffle iron, and let cook until desired crispness. Repeat until all waffles are made.
  4. Create a stack of waffles and top with whipped cream and the raspberry compote. Add an additional drizzle of honey if desired.

Tips for the best waffles

Follow these tried and true waffle tips for the perfect waffle stack every time:

  • Do not overmix the batter. The waffle batter should be thick, as it'll help with the fluff factor
  • Make sure you measure enough oil and liquids. In order to achieve the fluffy and moist texture, you want to make sure you are measuring as precisely as possible.
  • If you are dairy free, swap out the whole milk for almond milk. It's an easy switch!
  • When adding the batter to the waffle iron, add JUST enough to cover the iron plate, because it'll expand and cook when closed. Often times, the batter will spill out of the sides. We want to eliminate this happening!
