Roasted Vegetable Pasta Recipe

One of my favorite dishes to make is one that does not take more than 30 minutes to pull together, and does not take much forethought. Sometimes, I just don't have the time to think about an elaborate or intricate dish, so I rely on the basics: vegetables, pasta, and jarred sauce. This 3 ingredient roasted vegetable pasta is going to solve a lot of family arguments over "what are we having for dinner tonight?" That I can absolutely guarantee!

Roasted Vegetable Pasta

The name of this recipe is exactly what the recipe is about: homemade roasted veggies, dried pasta, mixed together with your favorite jarred sauce. We are big pasta fans, which is probably why my blog is full of 'em. My cheesy pesto tortellini bake is my number one searched and make recipe on the blog, with my easy baked mac and creamy spinach pasta following after. No matter the reason to make these pasta recipes, you and your family are going to LOVE them and easily make them part of your rotation over and over again.

What vegetables can I use?

You can literally use any vegetable you like to eat on a regular basis or even use vegetables you're HOPING to eat more of. That's the beauty of this recipe, it's truly open for interpretation. I like to use brussel sprouts and cauliflower, maybe some broccoli, but here's a quick list of veggies you can definitely incorporate into this dish:

  • Bell peppers
  • String beans
  • Asparagus
  • Snap peas
  • Butternut squash
  • Zucchini
  • Eggplant

You can even sauté spinach or corn and peas and toss them in!

Which pasta is the best pasta for this recipe?

One of the reasons why I love this recipe as much as I do is because you can use virtually any pasta you have on hand. There's no rule that you must use a specific shape or type. If you have rotini, go for it. Rigatoni? Sure! Linguini? Perfect! I prefer short pasta (penne, rigatoni, or fusilli) for this as the shorter, grooved pasta tends to grab onto the sauce a little better, but any shape works!

But... jarred sauce? Really?

Hear me out on this one. To make a really flavorful, delicious, traditional sauce takes a great deal of time, and sometimes, I have just 30 minutes to get dinner on the table. I like to have a few high quality jarred sauces in the cabinet for these types of occasions. Some of the brands I love include:

  • Delallo
  • Trader Joe's

You can also use a plain can of crushed tomatoes seasoned with basil for this too, and jazz it up with some garlic powder, onion powder. The roasted veggies will give it more flavor too. A simple marinara works well also!

There's not much that you'll need for this delicious vegetable pasta recipe, but here's what you'll need:

  • Baking sheet
  • Parchment paper
  • Pot
  • Wooden spoon
  • Cheese grater (optional for garnishing fresh parmesan on top)

Ingredients

When I say this recipe is simply made from 3 ingredients, I mean it. Grab your favorites of the ingredients below and you've got an amazingly delicious dinner reading in under 30 minutes.

  • Pasta: I opted for a high-fiber, high-protein penne from GoodWheat for this particular version, but I regularly use Barilla's rotini or rigatoni.
  • Jarred Sauce: This versions is made with arrabbiata, but a vodka, pomodoro, or simple tomato basil marinara is excellent too!
  • Vegetables: Brussel sprouts, broccoli, cauliflower, string beans, asparagus... If you can roast it, go for it!
  • Salt
  • Pepper
  • Parmesan Cheese: For garnish

Directions

For this recipe, it's a few simple steps, and you're eating and grinning from ear to ear in no time!

  1. Preheat the oven to 400º and line a baking sheet with parchment paper.
  2. Prep the vegetables and toss together with salt and pepper in a large bowl. Pour the vegetables onto the baking sheet and bake for 20 minutes.
  3. While the vegetables cook, bring a large pot of water to a boil and add salt. Cook the pasta until desired texture, drain, then set aside.
  4. When the vegetables are done cooking, add to the pasta then pour in the jarred sauce. Stir together the vegetables, pasta, and sauce until the sauce is evenly distributed.
  5. Plate and top with fresh parmesan cheese and serve.

Swaps and Tips

Can I add in a protein?

You sure can! Shrimp, grilled chicken, or even ground beef would be a great addition and extra protein.

What if I am gluten free?

Find your favorite gluten free pasta and cook the pasta based upon the directions on the package. It'll work just as well as regular pasta.
