Top Five Muffin Recipes Perfect for Meal Prep


If you know me, you know I have a serious love for all types of muffins. Chocolate, banana, lemon, double chocolate, gluten free, with nuts, without nuts. I love them all. I have a soft spot for muffins too, because they were the first baked good recipe I made when I started my blog in 2018. My recipe development and baking skills have improved quite a bite since then, and I've loved making new and delicious version of my base muffin recipe.

Muffins are a classic bakery recipe: made with a balance of dry and wet ingredients, and whichever add ins you desire. I am a huge fan of lemon in muffins, so two of the recipes in this round will include lemon-flavored muffins. The other three will incorporate different flavors, all equally delicious and excellent for a quick breakfast or snack.

There's a few handy tips I'd like to share with you prior to diving into the actual recipes in this muffin round up:

  1. Do your best to not overwork the batter. Simply use a spatula or a hand whisk to incorporate all the ingredients together. The batter needs to be thick.
  2. Let the batter sit on the counter for a few minutes. The batter will stiffen up, and will allow the leavening ingredients to work together to help with the rise in the muffins.
  3. Add a little dusting of Demerara sugar on top for an added crunch.

These are those kind. These are my favorite because they tie in a classic fruit and the zesty flavor of the lemon. These are excellent for meal prep because they can be prepped ahead of time on a weekend, and as the kids get ready for school (or spouse ready for work), you can hand a muffin over and breakfast is served. They've been a big hit with my friends and family, and I know they will be with yours, too!

I love making a double batch so that I can throw some in the freezer for another day, especially on days when the weather is chilly, or we have a packed agenda.

This is probably my most unique muffin recipe on the blog. It's a fall-inspired recipe, married with all of the chai spices such as clove, nutmeg, and cinnamon. The orange zest and fresh squeezed juice packs a beautiful citrus aroma and flavor, and when paired with the warm spices, these will instantly transport you to a pumpkin patch or a cider mill. These are moist, velvety, and are great for any occasion. These orange chai muffins are also a great way to add spice and different flavors for kids, but feel free to only add cinnamon in if you desire.

I recently made a batch of these muffins for a client shoot, and I fell in love all over again. This base recipe calls for all purpose flour, but you can easily swap out with some gluten free flour and they'll be just a delicious.
